
“Torroncino Semifreddo” with chocolate sauce
This is a classic dessert, perfect for autumn and winter periods.
This Italian semifreddo with a torrone sweet flavour served with a chocolate sauce and an orange wafer, knows how to impress your guests.
Recipe
Chocolate biscuit (flourless)
- 6 egg whites
- 190 g sugar
- 6 whisked yolks
- 60 g sifted bitter cocoa
beat until egg whites are stiff with sugar, add whisked yolks and the cocoa.
Bake for about 6-7 minutes (190°C) and cut disks of the same size of the mould.
Custard
- 250 g milk
- 125 g sugar
- 60 g yolk
- 30 g cornstarch
Make a normal custard.
Semifreddo
- 225 g custard
- 90 g Italian meringue
- 300 g whipped crem
- 70 g torrone
Add the crushed torrone to the cold custard, the Italian merimgue and the whipped cream.
Pour the mix into the moulds and close them with biscuit. Chill.
Chocolate Sauce
- 125 g dark chocolate 70%
- 125 g fresh cream 35%
Heat the cream, pour it a bit at a time into chocolate, mix.
Orange wafer
- 25 g orange juice
- 30 g icing sugar
- 12 g flour
- 25 g brown sugar
- 30 g melted butter
Mix all the ingredients and let it rest for 30 minutes in the fridge. Bake 5-6 minutes, 200°C.
Assembly
Demould the semifreddo and serve with the chocolate sauce and the orange wafer
