
Linzer biscuits
Made of whipped shortcrust with hard-boiled yolks, these biscuits are incredibly delicious
For the yolks, you can simply boil eggs (about 7 minutes) or you can mix them with icing sugar (20% of total yolk weight, taking it away from the indicated quantity) and microwave for about 1 minute (covered with nylon).
When ready, sift.
Recipe
- 150 g butter
- 25 g hazelnut or almond flour
- 40 g icing sugar
- 50 g hard boiled yolk
- 5 g cinnamon
- 130 g weak flour
- pinch of salt
In a mixer with paddle attachment whip the softened butter, add sugar, cold sifted yolks, almond flour, cinnamon and flour.
Pipe it with a pastry bag with a 9 mm round plain tip,
draw rings on a baking tray covered with wax paper.
Dress with mix berries jam in the middle.
Bake in a hot oven at 180°C for about 9-10 minutes.
