Today I’ll show you a really fast recipe to make a mirror glaze, but it requires a specific Valrhona product: Absolu Cristal.
Absolu Cristal is a neutral gelatin that can be coloured or used as it is.
Absolu Cristal Mirror Glaze

- 35 g Gelatina 200 Bloom
- 175 g Cold water for the gelatin
- 1000 g Absolu Cristal
- 100 g Water
- Put the gelatin in cold water. Heat the Absolu in the microwave until it is liquid.
- Add the hydrated gelatin and the dye. Blend it well with a hand blender (e.g.Bamix) avoiding the formation of air bubbles.
- Pour the glaze on the dessert when the temperature goes down to 32-35°C.
